This is a delicious version of Pico de Gallo. Flavorful and slightly sweet, it has a heat kick but no onion or vinegar added, so it can be used as an addition to other main entry items that already have an acid and complimentary onion spice.

5Roma tomatoes, seeded and diced
1cupcilantro, chopped
1cuppapaya cut into ¼ inch pieces
1cupsweet peppers cut into ¼ inch pieces
1small jalapeno pepper, seeded and diced
¾cupcelery, diced
1clove garlic, minced
½cupkey lime juice
2tspolive oil
½tspnigella seeds (optional)
½tspsea salt
½tspblack pepper
½tspground cumin

In a medium size bowl, add tomatoes, cilantro, papaya, peppers, celery and garlic and mix.

In a separate container mix key lime juice, olive oil, nigella seeds, sea salt, black pepper and cumin.

Pour juice mixture over solids and mix well.

Set aside in refrigerator for 1 hour or more to allow all ingredients to acquaint.
