Papaya Pico de Gallo

This is a delicious version of Pico de Gallo. Flavorful and slightly sweet, it has a heat kick but no onion or vinegar added, so it can be used as an addition to other main entry items that already have an acid and complimentary onion spice.

Ingredients
 5 Roma tomatoes, seeded and diced
 1 cup cilantro, chopped
 1 cup papaya cut into ¼ inch pieces
 1 cup sweet peppers cut into ¼ inch pieces
 1 small jalapeno pepper, seeded and diced
 ¾ cup celery, diced
 1 clove garlic, minced
 ½ cup key lime juice
 2 tsp olive oil
 ½ tsp nigella seeds (optional)
 ½ tsp sea salt
 ½ tsp black pepper
 ½ tsp ground cumin
Directions

In a medium size bowl, add tomatoes, cilantro, papaya, peppers, celery and garlic and mix.

In a separate container mix key lime juice, olive oil, nigella seeds, sea salt, black pepper and cumin.

Pour juice mixture over solids and mix well.

Set aside in refrigerator for 1 hour or more to allow all ingredients to acquaint.
