This dish combines the perfect balance of smoke, cream cheese, celery crunch and seasonings to create the most delicious salmon spread you've ever tasted.

 3 lbs Smoked Salmon (see YouTube for How-To Video)
 1 cup celery, diced
 ½ cup red onion, diced
 ¼ cup fresh dill, minced
 ¼ cup fresh lemon juice
 1 tbsp Rub Spice Blend (visit Spice/Condiment Recipe Section for recipe)
 ½ tsp hot paprika
 ½ tsp celery salt
 ¼ tsp ground black pepper
 8 oz cream cheese
 8 oz mayonnaise

In a food processor, mix together until smooth mayonnaise, cream cheese, lemon juice, and all dry spices.

In a medium size bowl, break salmon into pieces looking for and removing any stray bones that may have been missed by the fishmonger.

Add mayonnaise spread ingredients, celery, red onion and dill to salmon pieces and mix by hand until evenly blended.

Chill and then serve with bagel chips (says The Fishmonger's wife!)
