Josh Cooper just became the 2019 World Seafood Champion at the 8th Annual World Food Championships in Dallas, Texas, with his “Pan-Seared Scallops with Caviar Champagne Beurre Blanc”.
This talented resident of Tallahassee, Florida went from last place in last year’s competition to take home a prize of $10,000.
While a political consultant by day, Cooper fills his evenings with numerous activities including writing about culinary interests for Influence Magazine and creating his own line of rubs and seasonings.
Cooper was introduced to “food fighting” when a friend invited him to experience the World Food Championships in 2016, and he immediately felt called to battle. His first competition caught him unprepared, but this only fueled his determination to come back and win.
This year, competitors were required to infuse Hackleback Sturgeon sourced by America’s Best Caviar into their dish. Josh delighted the judges’ taste buds with his “Pan Seared Scallops with Caviar Champagne Beurre Blanc”.
